La joie n’est pas un choix, mais le sentiment que nous avons lorsque nous faisons les choses auxquelles nous étions destinés... peu importe le résultat... c’est un processus constant, en constante évolution, tel qu’il est, nous l’espérons, notre espèce la plus intelligente HOMO SAPIENS !

                                                                                                                             INTRO.
Cher lecteur, ce qui suit pourrait probablement être considéré comme une diatribe bavarde d’un philologue au cerveau moyen sur stimulé qui est devenu passionné par l’alimentation sous toutes ses formes et fonctions. Cependant, avec patience, cher lecteur, vous pourriez trouver des bijoux cachés. Alors, commençons par le début.
Le soi-disant grand dessein : Mettons une chose de côté avant de nous immiscer dans l’histoire d’Homo Sapiens et de leur destinée nutritionnelle et organoleptique.
Que faudrait-il faire pour croire si l’on pensait, comme beaucoup d’autres, que tout était conçu ? Je suppose que cela pourrait être vrai, mais Homo sapiens existe depuis environ un quart de million d’années, certains disent 200 000, d’autres disent 100 000, disons 100,000, pour les besoins de l’argumentation, il faudrait imaginer que des êtres humains naissent mais qu’en fait un grand nombre ne naissent pas mais meurent dans l’utérus ou sont ‘mort-nés’ ou ne vivent pas très longtemps pour diverses raisons.
D’ autres sont nés dans un monde terrifiant d’inconnu, tout est un mystère et un danger pour eux : éruptions volcaniques, tremblements de terre, dinosaures, famine et maladie, espérance de vie... pendant des dizaines de milliers d’années, seraient chanceux dans leur vingtaine, mourant probablement à l’agonie pour leurs dents, peu évoluées comme les dents et issues d’autres héritages de primates tels que l’appendice dont nous n’avons pas besoin et le fait que nos organes génitaux ont été conçus par un comité ou les lacunes de l’espèce exagérées par épidémies la rareté, par la guerre, la famine, la compétition, etc., et pendant environ 98 000 ans ‘le ciel et Dieu’ observe cela avec une indifférence totale, puis soudainement, il ne reste plus que 2000 ans : « pourquoi ne faisons-nous pas quelque chose à ce sujet et n’envoyons-nous pas quelque un dans une ville éloignée appelée Bethléem, né après une conception dont la véracité est douteuse, à la fin de l’année, au solstice d’hiver, Le 25 décembre avait en fait 4 jours de retard, mais il était difficile de déterminer avec précision quand le soleil a commencé à réapparaître ces jours-là, puis quelques années plus tard, après qu’une vie de superstar ait été torturée à mort dans la Palestine de l’âge du bronze ? Cela leur apprendra et cela leur donnera leur liberté....... eh bien, je pensais que tout le monde était libre d’y croire mais le designer qui a pensé à faire ça était et est, si cela existe vraiment, un créateur très cruel et capricieux, sporadique et incompétent !
Le premier acte convivial de l’Homo erectus a peut-être été de partager ce qui restait après la mise à mort ou, plus cyniquement, il ou elle avait mangé à sa faim et, étant rassasié(e), il ou elle s’est contenté(e) de tourner le dos aux vestiges de son repas et d’autres chasseurs-cueilleurs moins performants se sont aidés. Il est alors difficile de dire quand la cupidité est rassasiée et que la joie du partage commence même aujourd’hui, je me demande si nous en sommes capables.

Manger est notre relation originelle au monde, une relation essentielle à notre existence.
J’ai eu la chance d’avoir voyagé. J’ai mangé beaucoup de choses, probablement les plus délicieuses et incroyables... J’ai aussi mangé beaucoup de nourriture horriblement abusée. Cependant, j’ai l’impression que si vous êtes invité chez quelqu’un d’autre, en particulier des personnes ayant des moyens de subsistance limités, des options alimentaires et des compétences. Je pense que c’est tout simplement une bonne manière de montrer de la curiosité et de la gratitude pour leur hospitalité avec un cœur et un esprit ouverts, malgré ses préférences personnelles. Je me surprends à me poser la question : qui sont ces personnes ? Que mangent-elles et comment mangent-elles ? Comment se comportent-elles à table ? Lorsque l’on a une idée de ces questions, la compréhension de la vraie joie et de la philoxenia est évidente !

L’hospitalité, le service et la cuisson des aliments commencent donc par la conversation ou au moins une certaine communication. Oui ! Je suis conscient que la nourriture rapide et industrialisée ne peut pas, par définition, ne pas être incluse ici, en effet beaucoup de fast-food n’ont pas besoin d’interagir avec un humain du tout, vous touchez un écran pour choisir et payer ! Mais heureusement, non, JOYEUSEMENT ! Slow Food est fermement ancré dans ce principe. Je crois aussi et je sais que la Slow Food peut être rapide, mais la restauration rapide manque des paramètres nécessaires pour être Slow et je crois que la nourriture est plus qu’une simple alimentation. Il s’agit de prendre le temps d’apprécier les saveurs, les textures et les cultures qui se cachent derrière chaque plat et les personnes qui le préparent.
Dans un monde qui court vers la restauration rapide et la gratification instantanée, Carlo Petrini est le phare de l’espoir nous rappelant de ralentir et de savourer le voyage.
Ainsi, la préparation et le service de la nourriture sont des "histoires à raconter".
...... et la narration d’histoires change de goût. Alors voici les histoires, les expériences anecdotiques et certainement, au moins partiellement, apocryphes :

Dear reader, what follows could probably be considered as a drivelling diatribe of an over stimulated average sized brained philologist who has become passionate about food in all of its forms and functions. However, bear with me dear reader you may find hidden jewels. So, let’s start at the beginning.

The so-called grand design: Let’s get one thing out of the way before we get stuck into Homo Sapiens and their nutritional and organoleptic destiny.

What one would have to do to believe if one thought, as many do, that all was designed? I suppose it could be true, but Homo sapiens have existed for some say a quarter of a million years some say 200,000 some say 100,000 let’s say 100,000 for sake of argument one would have to imagine that human beings were being born but in fact a huge number are in fact not born but die in uteri or are ‘stillborn’ or do not live very long at all for various reasons.

Others are born into a terrifying world of the unknown, everything is a mystery and danger to them everything from volcanic eruptions, earth quakes, and dinosaurs to hunger and disease their life expectancy , for many tens of thousands of years, would be lucky in their twenties probably dying in agony over their teeth poorly evolved as the teeth are and from other inherences from primates such as the appendix that we do not need and the fact that our genitalia were designed by committee or the shortcomings of the species exaggerated by epidemics the scarcity, by war by famine and by competition etc and for 98000 years or so ‘heaven and god’ watches this with complete indifference then suddenly with 2000 years to go : “why don’t we do something about this and have someone in an out of the place town called Bethlehem born after a conception of doubtful veracity, at the end of a year, at winter solstice, the 25th December was in fact 4 days late but it was difficult to accurately determine when the sun started to reappear in those days, then some years later after a life of superstar  was  tortured to death in bronze age Palestine? That will teach them and that will give them their freedom” ……. well, I thought everyone is free to believe that but the designer who thought of doing that was and is, if really exists, a very cruel and capricious, sporadic, and incompetent one!

Homo erectus’ first convivial act was to perhaps share what was left after the kill or, more cynically, he or she had eaten his or her fill and being replete just turned his or her back on the vestiges of his or her meal and other less successful hunter gatherers helped themselves. It is then difficult to pinpoint when greed is satiated and the joy of sharing starts even today I wonder if we are able.

 

Eating is our original relationship to the world, an essential relationship for our existence.

Lucky enough to have travelled. I have eaten a lot of things probably the most delicious and incredible…. I have also eaten a lot of horribly abused foods. However, I feel that if you are invited into somebody else’s home particularly of people with limited; means, food options and skills. I think it is simply good manners to show curiosity and gratitude for their hospitality with an open heart and mind despite one’s personal preferences. I find myself asking the question who are these people? What and how do they eat? How do they behave at table? When one has insights to these questions an understanding of real joy and philoxenia is evident!

 

Hospitality, serving and cooking of food begins therefore with talking or at least some communication. Yes! I am aware that fast and industrialised food cannot by definition not included here, indeed a lot of fast-food joints you don’t need to interact with a human at all, you touch a screen to choose and pay! But happily, No, JOYFULLY! Slow Food is firmly embedded in this premise. I also believe and know that Slow Food can be fast but fast food lacks the parameters necessary to be Slow and I believe that food is more than just nourishment. It’s about taking the time to appreciate the flavours, textures, and cultures behind each dish and the people who prepare it.

In a world racing toward fast food and instant gratification, Carlo Petrini is the beacon of hope reminding us to slow down and savour the journey.

So therefore, the preparing and serving of food is ‘story telling’.

   ……and the telling of stories changes taste. So here come the stories, the experiences anecdotal and certainly, at least partially, apocryphal:

Le feu est le commencement de tout... c’est une chose puissante... même un signal qu’on pourrait se nourrir !
Tout a commencé avec Prométhée et la branche de fenouil : Reconnaissant ou non ; que se serait-il passé s’il n’avait pas énervé Zeus en portant les braises enflammées dans une branche de fenouil ressemblant à une louche et en la donnant à l’humanité... ça aurait été le cas de « continuer à cogner les rochers ensemble... le secret est quelque part là-dedans ! »
Le fenouil, rôti ou grillé, fut donc la première nourriture cuite !
Après l’arrivée du feu, et le développement d’une cuisine rudimentaire, il y avait autre chose à partager : pourquoi aimons-nous autant les feux ? Je pense que c’est atavique. Nous n’y pouvons rien. Peut-être que les femmes ont été séduites par ce scénario chargé en testostérone... et les filles des cavernes étaient attirées par l’odeur de la chair brûlée (en train de cuire) ainsi que par la chaleur et la sécurité du feu. Ce scénario est-il maintenu aujourd’hui dans cette cuisine professionnelle dominée par les hommes et la culture du barbecue ?
Comme un outil de séduction. Comme peut-être les filles des cavernes attirées par l’odeur de la viande cuite et la chaleur du feu, le gars des cavernes pourrait bien gagner ! Était-ce le premier « rendez-vous Tinder » ? Donc, aucune différence dans le monde moderne où un gars pourrait inviter une fille à dîner avec l’espoir de mieux la connaître ?
Cuisiner avec du feu a une poésie primitive qui est difficile à comprendre jusqu’à ce que vous le fassiez réellement !
Homo Sapiens : l’espèce à laquelle appartiennent tous les êtres humains modernes est la seule espèce qui cuisine... quand nous apprenons à cuisiner, c’est lorsque nous devenons humains. Par conséquent, si nous ne cuisinions pas, nous ne serions pas pleinement humains... alors la cuisine nous définit !

 

                                                                                                                          FIRE:
Fire is the beginning of everything….it is a powerful thing…. even a signal that one might get fed!
It all started with Prometheus and the fennel branch: Thankful or not; what would have happened if he had not pissed off Zeus by carrying the flaming embers in a ladle-like branch of fennel and giving it to humankind…. it would have been the case of “keep banging the rocks together guys…. the secret is in there somewhere!”
Fennel, roasted or barbequed, was, therefore, the first ever cooked food!
After fire came along, and a crude sort of cuisine developed there was something else to share, why do we love fires so much? I think its atavistic. We can’t help it. Maybe females were seduced by this testosterone charged scenario… and cave girls were drawn to the smell of (cooking) burning flesh and the heat and security of the fire. Is this scenario maintained today in this male dominated professional kitchen and BBQ culture?
As a Tool of seduction. As perhaps the cave girls drawn by the smell of cooking meat and warmth of a fire the cave dude might score! Was this the first ‘Tinder date’ ? So, no difference in the modern world where a chap might invite a girl to dinner with the hope, he could get to know her better?
Cooking with fire has a primitive poetry which is difficult to understand until you actually do it!
Homo Sapiens: the species to which all modern human beings belong is the only species that cooks…. when we learn to cook is when we become human. Therefore, if we didn’t cook, we would not be fully human….so cooking defines us!

           Pourquoi les Français sont-ils appelés « grenouilles » et pensent-ils ne manger que des cuisses de grenouilles et des escargots, et se promener sur des vélos chargés de baguettes et de chapelets d’oignons ?
Pourquoi les Italiens sont-ils appelés « mangeurs de macaronis » ou « mangeurs de spaghettis » et de pizzas ?
Les mangeurs de saucisses allemands ou les « Krauts » ?
Anglais comme « The roast beef » ou "fish and chips ? »
Le haggis définit certainement l’Écosse, tandis que l’Amérique sera toujours le hamburger, même malgré son origine teutonique.
Nous sommes donc devenus biologiquement évolués pour manger notre nourriture cuite.
Donc, ces souvenirs puissants que nous avons tous, des souvenirs d’avoir été cuisinés pour, généralement la mère, peut-être le père et souvent les grands-parents ou les amis. Cet acte de générosité et d’amour est fermement ancré en nous et est très puissant. La nourriture est un messager concentré de culture, qui s’ajoute à la nécessité de manger pour survivre. Nous le faisons tous ; juste comme nous respirons tous ; nous mangeons ; nous chions... c’est comme ça !

Le cuisinier a une relation très intéressante avec le monde, dans un aspect il ou elle regarde les gens, la famille, la communauté donnant ce cadeau d’amour crédible et aussi incroyable (comestible).... le repas !

Sur l’autre aspect tourné vers la nature, les plantes et les animaux permettant au cuisinier de reconnaître et de se reconnecter au fait que l’industrie ne nous nourrit pas... la nature le fait !

          Why are the French called ‘frogs’ and thought to eat nothing but frogs’ legs and escargots and ride around on bicycles loaded with baguettes and strings of onions?
Why are Italians referred to as ‘Macaroni’ or ‘Spaghetti’ and Pizza eaters?
Germans’ sausage eaters or ‘krauts?
English as ‘The roast beef’ or fish and chips?
Haggis certainly defines Scotland whilst America will always be the hamburger even despite its Teutonic origin.
We have therefore become biologically evolved to eating our food cooked.
So, these powerful memories that we all have, memories of being cooked for, usually mother, maybe father and often grandparents or friends. This act of generosity and love is firmly embedded in us and is very powerful. Food is a concentrated messenger of culture compounded into the necessity of our having to eat to survive. We all do it; just as we all breathe; we eat; we shit……it’s the way it is!

The cook has a very interesting relationship with the world, in one aspect he or she looks toward people, family, community giving that credible and also incredible (edible) gift of love…. the meal!

On the other aspect looking towards nature, plants and animals enabling the cook to acknowledge and reconnect to the fact that industry does not feed us…. nature does!
